Easy Keto Taco Recipe for a healthy dinner



Everybody loves a taco night, so why not make it healthier? This keto taco recipe is so simple you will want to make it every night! Best part? THE SHELL IS MADE OUT OF CHEESE!


Ingredients: (serves 4)

  • 2 cups shredded cheddar cheese
  • 1 pound ground beef
  • ½ package taco seasoning mix
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 diced avocado
  • 1 cup shredded lettuce
  • ½ cup shredded cheese
  • ½ cup diced tomatoes


1.) Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper so the “cheese taco shell” does not stick.

2.) Sprinkle the cheddar cheese into 6-inch circles (try and space them 2 inches apart)

3.) Bake the cheese for 6 to 8 minutes until it is melted/lightly brown

4.) Let the cheese tortillas cool for about 3 minutes before removing with a spatula.

5.) Wrap a wooden spoon handle with aluminum foil and balance over 2 cans. Take the taco shell and drape over the spoon handle/can so it can form into a “taco” shape.

6.) Begin cooking your beef in a skillet over medium high heat. Stir in some taco seasoning and salt/pepper to taste.

7.) Evenly distribute the beef mixture into the taco shells and top with your favorite toppings!

And just like that, dinner is served!

Mimosa recipes for the perfect fall brunch



Sure champagne and orange juice is delicious, but why not kick brunch up a notch?!


Take a look at these “fall themed” mimosas that will bring your Sunday the extra zest it needs!

1.) Apple Cider Mimosa

  • 1 thinly sliced apple
  • 1/2 tbsp of Cinnamon sugar
  • 3 oz of apple cider
  • 5 oz of champagne/prosecco

Directions (serves 2):

  1. In a small plate evenly distribute some cinnamon sugar. Take two champagne glasses and rim with a little water and then dip them into the sugar until coated.
  2. Divide apple cider evenly between the glasses.
  3. Top each champagne glass with champagne and add the thin apple slices for garnish!

2.) White Cranberry Mimosa

  • 1 cup of refrigerated white cranberry juice
  • 1 bottle champagne (chilled)
  • 4 sprigs fresh rosemary

Directions (serves 4) :

Pour 1/4 cup white cranberry juice to all 4 champagne flutes, and simply top off with the champagne. Finish each glass with a sprig of rosemary for garnish and you are set!


3.) Pomegranate Mimosa

  • 1 lime, sliced
  • 3 TBSP of sugar
  • 2 cups pomegranate juice
  • 750 ml champagne (1 bottle)
  • ½ cups pomegranate seeds
  • 8 rosemary sprigs

Directions (serves 8):

  1. Glide the lime slices around the rim of the champagne flutes and dip the rims into a shallow dish coated with sugar.
  2. Fill the glasses 3/4 with champagne
  3. Top with pomegranate juice.
  4. Garnish with fresh pomegranate seeds and rosemary.

4.) Blushing Mimosas

  • 2 cups orange juice
  • 1 cup pineapple juice
  • 2 tablespoons of grenadine
  • 1 bottle of Champagne/sparkling white wine

Directions (serves 4):

  • Mix together the OJ, Pineapple juice, and grenadine.
  • Add equal parts of the juice mixture and Champagne in flute glasses.
  • For garnish, add 2-3 maraschino cherries to each glass

5.) Cinnamon Pear Mimosa

  • 750 ml bottle Prosecco, or Brut champagne

Directions (serves 4):

  1. Pour equal parts pear juice and champagne into a flute glass.

Guilt Free Vegan Brownies




With colder weather coming, the perfect way to stay warm is through comfort foods. But what about when your favorite dessert is full of ingredients that will leave you feeling guilty? These delicious brownies are sure to satisfy any sweet tooth.

The best part? They are vegan and gluten-free, and the health benefits are amazing. This recipe uses both pumpkin and cacao, which are both rich in antioxidants. It’s also protein rich. Can I get a win-win?!


What You Will Need…

For the brownies

  • 2 bananas
  • 1 tbsp cacao nibs
  • 1/2 cup of pumpkin puree (it’s #pumpkinszn!)

For the frosting…

  • 1 1/2 scoops of your favorite vegan chocolate protein powder
  • 1-2 tbsp of almond butter
  • 1 cup of almond milk

Let’s get down to business

1.) Preheat your oven to 350 degrees and coat your pan with a non-stick spray. You’re gonna want every last bite of these brownies, so make sure none of them stick to the pan!

2.) In a bowl, mash your bananas. The more ripe they are, the easier they will be to work with. They’ll be sweeter too!

3.) Add in 1/2 cup of pumpkin puree. Brownie points if you use homemade pumpkin puree, no pun intended.

4.) Add in 1 tbsp of cacao nibs to the mixture. This is where things will get chocolat-y!

5.) Mix it alllll up and bake in the oven for 15-20 minutes. Time to put on your multitasking pants because it’s time to make the frosting.

6.) In a bowl, mix chocolate protein powder and almond butter.

7.) Slowly add in the almond milk and mix together

8.) Once the brownies have baked and cooled, it is time to frost.

Voila! You now have gluten free, vegan brownies that are sure to give you the warm and fuzzies on any fall day.

Need something tasty to bring a little more color to your morning? Toss your frozen waffles and get your kitchen ready because these tie-dye waffles are just as inviting as they are Instagram worthy. Your phone will definitely be eating first when you make these for your next brunch extravaganza! Did someone say #FoodGoals?


You will need:

  • 2 eggs
  • 1 cup of milk
  • Pancake mix (Bisquik or Aunt Jemima works wonderfully)
  • Food coloring
  • Vanilla extract (optional)
  • 5 bowls
  • A Waffle Iron

Let’s jump right in!

  1. 1. Crack eggs into your first bowl. Make sure there are no shells!
  1. 2. Add your choice of milk and a touch of vanilla extract to taste.
  2. 3. Add your pancake mix into the bowl. Mix it up. If you don’t have a hand mixer, a little elbow grease is always recommended.
  1. 4. Separate batter into four separate bowls and mix in food coloring. If you want more colors in your tie-dye confection, separate into additional bowls. Feel free to get creative!
  1. 5. Add mixture into a Ziplock bag. To create a DIY piping bag, just snip off a bottom corner with scissors and rubber band the top. This makes the process of adding the batter to the waffle iron easier, especially if you have little helping hands involved.
  1. 6. Empty your multi-colored batters onto a heated waffle iron to create a tie-dye effect. Depending on the model you are using, cook time is usually around five minutes.
  1. 7. Once your waffles are finished cooking, garnish with whipped cream, sprinkles or your favorite fruits!
